Simple Shrimp and Grits

1 lb of Nitrate free uncured bacon

1lb of raw shrimp

1\4 cup or more of hot sauce

4.5 cups of veggie broth

1 tbsp butter

2 cups of shredded cheese

2 cups of stone ground grits (No respected southerner uses instant grits- My cousin Vinny)

1\2 cup of milk

1 tsp of minced garlic

2 green onions chopped

1\2 tsp dried Italian herbs

 In a saucepan, heat up your veggie stock to boiling and add your butter to melt.

 In a large frying pan, start cooking up your bacon cut up in 1" or so pieces.

 Add your grits and turn down to a simmer and allow the grits to slow cook and absorb the veggie stock. Apporx 15-20 mins.

 When your bacon is half cooked, add in your shrimp, garlic, onion, and herbs. Cover and stir occasionally until the shrimp and bacon is fully cooked.

 Slowly stir in the cheese of your choosing. I have used parmesean, cheddar, and smoked gouda and all were wonderful.

 Add your hot sauce and stir in. We like it spicy so its closer to a half a cup rather than a a few teaspoons. The cheesy grits balance out the heat in the shrimp.

 Make a bed of cheese grits on your plate and top off with the shrimp and gravy sauce. Ta-Dah!
