Quinoa and Black Bean Burritos
2 Cups of Veggie Broth (Or water, but veggie broth really ups the flavor game)
1 Cup of Quinoa
Bring the veggie broth to a boil and add Quinoa and simmer until all the mositure is gone. (Approx 15 mins)
1 Can of Black beans, drained and rinsed in BooZi treated water
6 sweet peppers sliced
1 med onion chopped
3 cloves of garlic minced
1 tsp of cilantro
3 tbsp of organic salsa (More on reserve for topping)
Vegan Shredded Cheddar Cheese (Optional)
Whole Wheat Tortillas
Spices: A pinch of cumin, Cayenne, and paprika. Salt and Pepper to taste.
Toppers: Lettuce, Salsa, Vegan Cheese, Avocado, what ever looks good to you.
