Italian Stir fry with Roasted Potatoes

This makes an ass load for left over lunches. 

Ingredients:

1 1\2 pounds of red potatoes unpeeled and cubed small

olive oil

Dried Italian Herbs

1 Large Onion chopped

1 Zuchinni sliced

3 cloves of garlic minced

8 small sweet peppers sliced

2 cans of diced tomatoes drained

2 small cans of mushrooms drained

2 cans of garbanzo beans drained

1 jar of pasta sauce

Salt and pepper to taste

Here we go:

 Drizzle olive oil in the bottom of a baking dish. Place diced potatos and drizzle with olive oil, Italian herbs. and salt n peppa and bake at 350 for 35 Minutes or so stirring occationally.

 Potatoes should look similar to this out of the stove. I shut my stove off and put them back in to stay warm whilst I make the main event.

 Drizzle olive oil on the bottom of a large frying pan or pot on Medium heat and place your onion, peppers, zucchini, and garlic until they get tender. Add in a tsp of Italian dried herbs as its cooking.

 Add in your canned mushrooms and tomatos and combine until well heated.

 Stir in your chickpeas until heated as well.
