Basic & Supped up Vegan Alfredo Sauce

Basic Alfredo

8oz Go Veggie Vegan Cream Cheese

2 Tbsp Vegan Butter

2 cloves of Garlic minced

1 Cup Soy milk

Salt and pepper to taste

In a sauce pan on low heat, melt butter and add garlic until aromatic (1 minute). Stir in cream cheese until melted and then stir in soy milk. adjust taste preferences with salt and pepper. Serve over pasta.

Supped up version:

In addition to above we added:

3 oz of sliced mushrooms

1?2 can of diced tomatoes drained

A large handful of fresh spinach

handful of pine nuts

while cooking your garlic in the butter, add in mushrooms and onions until tender. then add the spinach and tomatoes. continue on with cream cheese and milk (add 1\4 cup extra milk to accommodate more ingredients). Serve over pasta and sprinkle pine nuts on top. de-lish!
