Veggie Loaded Broccoli Cheese Soup

4 Stalks of celery chopped

3 cloves of garlic minced

1/2 onion chopped

3 crowns of fresh broccoli chopped

2 Cups pf carrot chopped

6 Small red potatoes peelings on, cubed

6 Cups of Veggie stock

4 cups of veggie cheese sauce* recipie available via blog,

1 cup soy milk

4 tbsp of arrow root or corn starch slurry.

In a large pot place all your chopped veggies with the veggie broth, simmer until tender. stir in cheese sauce, soy milk, and root powder slurry and stir until thick. Add Salt and Pepper to taste. Great soup for freezing!
