Veggie Alfredo Pizza

1\2 Onion diced

4 oz mushrooms sliced

5 sweet peppers 

3 cloves of garlic minced

3 tbsp of Vegan Butter

8 oz Go Veggie Vegan Cream Cheese

1 cup soy milk

salt and pepper to taste

2 cups fresh spinach

1 cup diced tomatoes

1\2 cup of kalmata olives sliced 

3 tbsp of pine nuts

In a sauce pan over medium heat, melt vegan butter. Add in garlic, sweet peppers, onion, and mushrooms until tender. Stir in soy milk, vegan cream cheese, and salt n pepper until creamy. On pizza crust, push aside veggies in the alfredo sauce and spread sauce as a think base layer for your pizza. Layer your spinach to cover the sauce and sprinkle tomatoes and olives on top. Drizzle alfredo veggie mixture evenly around pizza. Sprinkle with pine nuts. Bake at 375 until spinach is wilted and cheese mixture is well heated. About 30 mins. Slice up and serve.
